Cheam (Fried Liver)


* Liver 400 g

* 2 dried chilies

* 1 onion

* 1 tomato

* 3 cloves garlic

* A piece of ginger

* 3 to 4 wild pepper

* 4 tsp oil

* Spring onions

* Salt


Cut the liver into small cubes. Chop the onion, tomatoes, garlic, ginger, and the chillies. Fry the onion until it becomes brownish. Then add the chopped liver and fry for about 10 minutes. Finally add garlic, ginger, tomato and crushed wild pepper. Pour two cups of water and cook until the water evaporates. Garnish with chopped spring onions and salt to taste.
